Healthy Breakfast Muffin Combo

If you don’t have alot of time, but want to eat a healthy meal, prepare these muffin ingredients the night before for a powerful breakfast!

Preheat oven to 350 degrees F. Lightly oil 2 muffin pans with olive, coconut oil or butter.

Ingredients for Easy Egg Muffins:

  • 8 eggs
  • 4 cups of different vegetables and herbs (peppers, zuchini, spinach, onions, and cilantro work well)
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon minced garlic

In a large bowl, beat the eggs, salt and pepper.  In another bowl, mix the veggies.  Pour the vegetables into the cups apx. 2/3 full.  Finish filling them up 9/10 of the way full with the egg mixture.

Ingredients for Gluten – Free Banana Hemp Muffins

  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups brown rice flour
  • 2 large eggs
  • 2 mashed bananas
  • 1/3 cup hemp seeds

Mix ingredients in order thoroughly.  Pour 3/4 way full.

Bake both trays  in the oven for 20-25 minutes.  Let cool.  Top banana muffins with butter raw honey, and egg muffins with Salsa if desired.

They still taste great the next day!
